These delicious stuffed peppers are perfect for a family lunch or dinner. They are healthy, quick and easy to make! The bell peppers are stuffed with caramelized onion, ground turkey, seasoned tomato sauce, black beans and rice topped with shredded Colby jack cheese and served to perfection.
This recipe takes stuffed peppers to a whole new level! Each bite creates the perfect flavor and yummy goodness you’ll never get enough of.
And did I mention I made this recipe for 20 people from different multiple countries and they all loved it! This recipe is perfect for any occasion that everyone is sure to love. The simple and few ingredients this recipe uses makes it perfect for a large group of people. (You just need to double or triple to amounts).

Make The Stuffing
Although stuffed peppers may seem really fancy and difficult, it is actually quite the opposite. I use ground turkey, however you can also use ground beef, Italian sausage, chicken, or pork. Or you can keep this dish vegetarian and leave out the cheese and meat. The beauty about this dish, it is uses beans as other source of protein.
- For starters, rinse and cook the rice until it is fully cooked and set aside.
- Next, prepare the bell peppers. Split them in halves and the remove the seeds and membrane. Place in a cooking dish. (Note: the picture below only uses 2 bell peppers, however this recipe uses 3, so you will have 6 halves).
- Drizzle the bell peppers with a little bit of olive oil and put into the oven to softy and roast slightly.
- In a nonstick pan, sauté the diced onions until soft and translucent. Then add the ground turkey and season with basil, oregano, salt and pepper.
- Brown the ground turkey as you chop it into piece with a large cooking spoon. If you are using fatty meat, got ahead and spoon out the excess fat produced after cooking. Add in the black beans and stir together.
- Next, add in a can of tomato sauce and cook everything together.
- Finally, add in the cooked rice and stir together. Season with salt and pepper. And there you have it! Your bell pepper stuffing.
How to Make Stuffed Peppers
- Take the bell peppers out of the oven. They should be slightly undercooked.
- Once you have finish the stuffing, you can then begin filling your bell peppers. Begin by spooning the stuffing into the bell peppers until they are slightly overfilled and top with cheese.
- Put the stuffed peppers back into the oven for 10 minutes in order for the flavor to settle, the bell peppers to fully cook, and the cheese to melt.
- Take the stuffed peppers out of the oven and allow 5 minutes to cool and then enjoy!
What Color Of Bell Pepper To Use?
You can use whatever color of bell pepper you would like. Keep in mind that red peppers are the sweetest, yellow and orange of mild, and green peppers are bit bitter.
I typically go for red, yellow or orange and stay clear of the green because I like the sweeter taste of the others. However, if you love green peppers, go for it! It really comes down to personal preference.
Want to Substitute Ground Turkey?
I love using ground turkey because it is super nutritious and I like cooking with it. 1 serving size (4oz.) contains 22 grams of protein with only 167 calories.
However, good turkey is not the only option and there are a ton of delicious and health alternatives. You can also use ground beef, chicken or pork. Italian sausage would also be a delicious alterative and give great Italian flavoring to the dish.
Storing Tips
- Fridge: Store in the fridge for 4-5 days in an airtight container.
- Freezer: Place the fully cooked stuffed peppers in a freezer safe container, seal and label with the date. Use within 3 months of freezing.
- Reheat: You can reheat these stuffed peppers in the microwave or the oven at 350 degrees Fahrenheit or 180 degrees Celsius in an oven-safe dish and covered with tin foil. If you are reheating from frozen, cook the stuffed peppers in the oven at the same temperature but leave in for 30 minutes.
What To Serve with Stuffed Peppers?
- My favorite way to enjoy stuffed peppers is with a baked potato with sour cream, cheese, and green onions. You can also do potato wedges, sweet potato fries, or garlic mashed potatoes
- You can also try sautéed green beans, cheesy garlic bread, or a house salad.
- Stuffed peppers are already a healthy, balanced meal including carbohydrates, vegetables, and protein so the rest is up to you. You can eat them alone or add an extra side dish.
The Ultimate Stuffed Peppers Recipe

Ingredients
1 lb. Ground turkey
1 can Tomato sauce
1 can Black beans
1/2 medium White onion
3 Bell Peppers
Shredded cheese
1.5 cups Rice
Basil
Oregano
Garlic
Directions
- Reheat oven to 350 degrees Fahrenheit. Rinse 1 and 1/2 cups of rice and add water equal parts water. Bring to a boil and then let simmer for 15 minutes. Set rice aside.
- Wash the bell peppers and cut in half horizontally. Take out of the membrane and seeds. Place the sliced bell peppers in a baking dish and drizzle with olive oil. Place in the oven for 10 minutes to soften and partially cook the bell peppers.
- In a non-stick pan, sauté olive oil, diced onion, and chopped garlic. Add in the ground turkey and season with oregano, basil, salt and pepper.
- Rinse 1 can of black beans and add to pan. Stir together.
- Then, add 1 can of tomato sauce and the rice cook together.
- Take the bell peppers out of the oven and begin filling the peppers. Spoon the mixture into the peppers until they are fully stuffed. Top with cheese and place back into the oven for 10 minutes to allow the bell peppers to fully cook, flavors to set, and cheese the melt.
- Let sit for 5 minutes and enjoy!
Notes
- For this recipe, I used ground turkey however you can also try ground beef, chicken, pork or even Italian sausage. You can also substitute the cheese to a different kind.
