I got the perfect one pan dinner recipe. It’s as simple as combining all the ingredients in a oven-safe dish and let it bake.
I found a recipe similar to this a while ago and sense then have added and tweaked it to include everything you need for a balanced meal including protein, carbohydrates and veggies.
I was so shocked at how simple and easy yet so delicious this recipe was! And now, this is a classic staple for my dinner rotation!
Make this ahead of time and pop it into the oven for a fast & busy weeknight meal.

CREAM OF CHICKEN CASSEROLE RECIPE
You’ll Need:
- 1-1/2 lbs. skinless chicken breasts (chicken thighs work too!)
- 3/4 cup of uncooked rice
- 1 can of cream of chicken (cream of mushroom or cream of cheddar works too!)
- 1 cup of chicken broth or stock
- 1 head of broccoli
- 1 cup of shredded cheddar cheese
- 1 tsp of garlic powder
- 1 tsp of paprika
- 1 tsp of seasoned salt
- pepper to taste
SUBSTITUTIONS AND ADDITIONS
Cream of Chicken: If you don’t have cream of chicken but still want this creamy casserole, you can easily substitute it for cream of mushroom or cream of cheddar.
Spicy: If you want things a little spicier, feel free to add some hot peppers or red pepper flakes to the baking dish.
Cheese: If you don’t have cheddar cheese or prefer a different kind, go ahead and use whatever you want. Mozzarella, Monterey Jack, Colby jack or any other kind are great options.
Chicken: Don’t want chicken? Ground beef or any other form of meat is also great with this dish. However, if you use a really fatty type of meat, it will be added to the casserole. In this case, I recommend you cook the meat first, dispose of the extra fatty liquid and add into your casserole dish.
HOW TO MAKE THIS ONE PAN DINNER CREAM OF CHICKEN CASSEROLE RECIPE
Step one: Spray you baking dish with cooking spray or coat with olive oil. Preheat your oven to 375°F.
Step two: Remove the raw chicken breasts from the package and season both sides with garlic powder, paprika, salt and pepper. Set aside. Then, cut the broccoli into small bite-sized pieces.
*Pro-tip: If they are thick, you can slice them in half horizontally to make them thinner and quicker to bake and cook fully.
Step three: In your baking dish, add rice, cream of chicken soup, chicken broth, cheese and broccoli. Use a fork or spoon and whisk until everything is combined.
Step four: Add the chicken breasts on top of the mixed ingredients pressing them slightly into the dish. Bake, COVERED with foil on the middle rack for 35-45 minutes or until the chicken is fully cooked. Cooking time may depend on your oven and thickness of the chicken breasts.
Step five: Uncover the dish, add a little bit of cheese on top and bake for another 5 minutes until the cheese is melted. Let rest for 5-10 minutes and serve!
*Pro-tip: If you want this dish to cook faster, slice the chicken breasts thinner.

In the freezer: If you wish to freeze this dish for later, let it cool to room temperature and then store in an airtight container in the freezer for 1-2 months. Defrost and heat on the stovetop or in the oven until warmed through.
