Let me introduce to you one of my ALL TIME favorite dinner recipes. Pesto caprese chicken! It is so simple yet so yummy and combined some of favorite ingredients!
This includes seasoned chicken breast with delicious pesto sauce, fresh mozzarella and tomatoes drizzled with balsamic glaze and top with fresh basil.
If you’re looking for yummy, healthy dinner recipe, this is perfect to add to the weekly dinner rotation. It only takes about 30 minutes to make including prep and cook. It really doesn’t get much easier than that!

Ingredients
- 3 chicken breasts
- Pesto Sauce
- 1 Tomato
- Fresh mozzarella
- Balsamic glaze
- Fresh basil
- Salt and pepper
- Chicken rub
Directions
Step 1
Preheat the oven to 350 degrees.
Step 2
Unwrap the raw chicken and cut any fat off the sides if necessary. Then take the chicken and cut each piece in half horizontally. By the end, you will have 6 thinly sliced chicken breasts as shown in the pictures above.
Step 3
Spray the bottom of a sheet pan with oil and place the chicken on the pan. Put some chicken rub on both sides of the chicken breasts. I used this rub by Chuck’s Meats, however, any type of chicken rub will be good. Then, place the chicken in the oven and allow to cook for 10 minutes.
Step 4
While that is cooking, take the large tomato and mozzarella and cut both of them into slices. You will need one slice of each for all 6 chicken breasts. You want them to be bigger slices to fit on the chicken breasts. The picture above shows 2 tomatoes however, only 6 slices or 1 tomato is necessary.
You are going to cut the fresh basil leaves into small pieces to sprinkle on top at the end.
Step 5
After 10 minutes, take the chicken out of the oven. Spread pesto sauce on top of all the chicken breast.
I typically used the remade pesto sauce found at most grocery store, however, if you want to take it a step further, you can try this amazing homemade fresh pesto recipe.
Add the mozzarella and tomato on top. Place the chicken back into the oven for 10 more minutes to allow the cheese to melt.
Step 6
Once the chicken is done cooking and the cheese is melted, take it out of the oven. Sprinkle some salt and pepper on top.
Step 7
Finally, drizzle some balsamic on top and sprinkle the fresh basil on as well. Serve and enjoy.
While this deliciously juicy pesto caprese chicken is perfect on its own, there are a ton of different foods that can be served with it as well. Some of my favorite options are rice or pasta. However, the choices are unlimited. Potatoes topped with some seasoning such as garlic or rosemary, a nice side salad, or a vegetable of your choice are great too.

Simple and Healthy Pesto Caprese Chicken

Ingredients
3 raw Chicken breasts
3 tbs Pesto sauce
1 Tomato
Fresh mozzarella
Balsamic glaze
Fresh basil
Chicken rub
Salt & Pepper
Directions
- Preheat oven to 350°F
- Unwrap raw chicken, cut off any fat and slice each breast in half horizontally so make 6 thin chicken breasts.
- Add your favorite chicken rub to both sides, put the breasts in a glass baking dish with some olive oil, and place in the oven for 10 minutes.
- While the chicken is cooking, cut the tomato and mozzarella until you have 6 slices of each. Chop the basil leaves.
- After 10 minutes, take the chicken out of the oven. Using a spoon, spread the pesto over the chicken and place 1 tomato and one mozzarella slice on each chicken breast. Then, put the pan back in the oven for 10 more minutes to allow the chicken to fully cook and the cheese to melt.
- After 10 minutes, take the pan out of the oven. Drizzle the balsamic glaze over the top. Finally, sprinkle salt, pepper and fresh basil over the top.
- Enjoy!
Notes
- While this delicious recipe is perfect on it’s own, there are endless options it can be served with. A few of my favorites include rice, pasta, or mashed potatoes.
